I’ve tested a lot of Minecraft mods that sound cool on paper but feel kind of forgettable in-game. Minecraft Immersive FX Mod (Dynamic Surroundings, Ambient Sounds) is more interesting than that, mostly because it actually changes how the world feels instead of just adding random clutter. The Minecraft ImmersiveFx mod is a fork of the Dynamic Surroundings mod (originally made by Orecruncher) that seeks to add additional sound events, particles, high-quality foley, and changes every sound in DS and a few in MC. Forge mod that allows the player to customize the noises that play and adds to the game's ambient immersion.
